Chocolate Mousse Pie |

Makes 1 9-inch pie This rich-tasting, luxurious Chocolate Mousse Pie is great for any occasion. For an excellent variation, make it with a combination of chocolate and peanut butter chips.
Pie Crust: 1 cup spelt flour 1/4 cup cocoa powder 1/4 cup succanat 1 teaspoon baking powder 1 teaspoon baking soda 1/2 cup soy milk 1/2 cup maple syrup 1/4 cup safflower oil 1/2 cup water 1/2 teaspoon vanilla extract 1/4 teaspoon almond extract 2 tablespoons chocolate chips Mousse: 2 1/4 cups chocolate chips 1 cup plus 2 tablespoons vanilla soy milk 1/2 teaspoon cocoa powder 1/2 teaspoon kuzu 1 1/4 blocks (20 ounces) silken tofu 1/4 cup maple syrup 2 teaspoons vanilla extract 1 teaspoon almond extract 1. To prepare the pie crust: Preheat the oven to 325°F. 2. Mix the flour, cocoa powder, succanat, baking powder and baking soda together in a large mixing bowl. In another bowl, combine the soy milk, maple syrup, oil, water and vanilla and almond extract together. Add the wet ingredients to flour mixture and stir well to combine. Pour the mixture into a baking pan and bake for 35 minutes. Let cool in the refrigerator for about an hour. 3. Crumble the baked dough, and press the crust crumbs into 9-inch pie plate and sprinkle with the 2 table-spoons of chocolate chips. 4. To prepare the mousse filling: Place chocolate chips, one cup of soy milk and cocoa powder in a bowl. Dissolve kuzu in the remaining 2 tablespoons of soy milk and add to mixture. Place the mixture in double boiler and heat over simmering water on medium heat until melted, stirring occasionally, until melted. Transfer to a mixing bowl and let cool slightly.
